Chicken breast with peanuts

for 4 persons

Ingredients:

  • 80 g Peanuts
  • 2-3 dried red chillies
  • 450 g chicken breast fillet
  • 3 tbsp peanut oil
  • 3 garlic cloves
  • 2 cm ginger root
  • 2 tbsp chicken stock
  • 2 tbsp rice wine (or dry Sherry)
  • 1 tbsp dark soy sauce
  • 2 tsp sugar
  • 2 tsp white rice vinegar (or apple vinegar)
  • 1 tsp salt
  • 2 tsp sesame oil

  • NGR red chillies
  • EXOTIC FOOD sesame oil
  • PAGODA Rice wine
  • MIZKAN rice vinegar

Preparation

Preparation time: about 20 minutes (plus time for roasting and cooking)

  1. Roast the Peanuts in a wok without oil until they decolor, take them aout and set aside. Cut the chillies lengthwise in half. Wash the chicken breast fillet, tap it dry and cut it into cubes of around 2,5cm.

  2. Heat the peanut oil in the wok and then cook the chillies for 15 seconds. Whoever the tast you can leave them in or take them out. Add the chicken breast and the Peanuts and cook. Let erveything drain with a sieve.

  3. Peel and chop the garlilc and the ginger. Let it come to a boil together with the chicken stock, the rice wine, the soy sauce, sugar, vinegar and salt in a wok, then reduce the heat. Add chicken, peanuts and if you like chilli and let it cook 4 minutes. At last add a sprinkle of sesame oil, mix well and serve immediately.
