Coconut Curry Chicken

Ingredients:

  • 2 tbsp coconut oil
  • 600gr chicken breast cut into stripes
  • 2 tbsp curry paste (yellow, green ore red to taste)
  • 2 spring onions
  • 3-4 garlic cloves
  • 2 pieces of ginger cut into stripes
  • 1-2 red peppers
  • 1 big zucchini
  • 250g pineapple, cut
  • 800ml coconut milk
  • 2 tbsp coconut flour
  • 100g cashews
  • 2 tbsp desiccated coconut
  • 2 little branches coriander

Preparation

Time für preparation: approx. 30 minutes

1. Heat the cocomut oil in a wok or big pan

2. Sear the chicken stripes while stiring, reduce heat after about one minute.

3. One after the other add curry paste, spring onions, garlic, ginger, peppers and zucchini and fry while constantly stiring for 3-4 minutes.

4. At the end add pineapple, coconut milk and coconut flour, stir thouroughly and let come to boil shotrly. 

5. Serve with cashews, desiccated coconut and coriander.
