Nasi Goreng

for 4 persons

  • 200 g Long grain rice
  • 1 vanilla bean
  • 25 g dried shrimps
  • 1/2 bunch spring onions
  • 2 garlic cloves
  • 4 tbsp corn oil
  • 3 tbsp soy sauce
  • 1 tbsp Kecap Manis
  • 1 tbsp tomato puree
  • 2 tsp Sambal Olek
  • 4 eggs
  • 1/2 Cucumber
  • 3 tbsp dried roast onions
  • 1 tbsp chopped coriander

Time for preparation: approx. 20 minutes (plus time for soaking, stewing and cooking)

  1. Wash the rice, let it drip off and cook it fot 15 minutes in 375 ml boiling water with 1/2 tsp salt, until the rice is al dente. Take it off the stove but let soak for another 10 minutes with lid closed.
  2. Let the shrimps soak in warm water for 10 minutes and then let them drip off. Wash and cut the spring onions into rings, peel and chop the garlic.
  3. Heat 3 tbsp of oil in a wok and braise the onions and garlic in it. Add firstly the shrimps and shortly after the rice. Stir well untill everything is covered nicely in the oil. Mix soy sauce, kecap manis, tomato puree and sambal olek in it and let it cook for 3 minutes.
  4. While the mixture ist cooking, heat the remaining oil in a second pan and prepare 4 fried eggs one after the other. Arrange the Food on 4 plates and cover with the fried egg. Garnish with cucumber slices, roasted onions and coriander - serve and enjoy!
